Gather Your Ingredients

The basic pantry ingredients to begin with include rolled oats, all-purpose flour, brown sugar, white sugar, butter, eggs, raisins, baking soda, cinnamon, vanilla extract, and a pinch of salt. The room temperature butter and eggs are used to make the dough smoother and to achieve a better texture.
Cream the Butter and Sugars

In a big bowl, softened butter is mixed with brown sugar and white sugar till it is light and fluffy. This process introduces air into the mixture, thus making soft and chevy cookies, as opposed to hard ones.
Add Eggs and Vanilla

Add the eggs one after another and stir vanilla extract in. The addition of each ingredient needs to be beaten well so that the mixture turns creamy and providing your cookies with the rich flavors and structure.
Combine the Dry Ingredients

Whisk the flour with baking soda, cinnamon and salt, in another bowl. Gradually pour this dry mixture over the wet ingredients, and combine only to a minimum. The mixing of cookies may make them hard rather than soft.
Stir in Oats and Raisins

Add the rolled oats and raisins with a spatula. Ensure that the oats have even spread all over the dough. You may add the raisins that have been soaked in warm water after 10 minutes and patted dry.
Chill the Dough

Bake the dough in the fridge at least 30 minutes. The chilling will aid the cookies to keep their form when they bake, as well as improve their flavor. It also does not allow them to rather spread out too thin in the oven.
Scoop and Bake

Warm your oven to 350degF (175degC). On a lined baking sheet, scooped tablespoons of dough in rounded balls, spacing the cookies in between. Bake 10-12 minutes, making sure that the edges are golden, but centers remain looking a little soft.
Let Them Cool Properly

Let cookies sit in baking sheet approximately 5 minutes to cool them and then place them on wire rack. They will keep on setting and allowing you that ideal chewy centre, with a slightly crisp border.
